Lets Cook - Fish
On this “Let’s Cook” workshop you will learn how to skin white fish yourself and then make it in to a fish pie with either a Florentine or duglere sauce and a potato topping. You will then learn how to fillet a round fish and serve it with a leek, pea or asparagus veloute on a bed of crushed potatoes. The fish recommended by the tutor are haddock or cod fillets and seabass or trout. Should you feel the two dishes are too much then you can watch the second being made and save your prepared fish to a later date. During this course you will learn knife skills and how to adapt recipes as well as two sauces Prosp User 3
This workshop will not only give you the confidence to fillet and skin both a flat and a round fish, but also how to cook them and make accompanying sauces. At the end of the session you will have one or two dishes to serve and you will have learned the skills required to prepare, cook and present fish. Prosp User 4
You will need to provide all your own ingredients and the recipes will be sent out by email in the week running up to the course. The cost of them will be approx. £10 (depending on the number of portions you chose to make) Prosp User 5
