Let's Cook - Pasta
You will learn how to make fresh pasta and turn it into ravioli, cannelloni or tortellini which you can fill with spinach and ricotta (and I will give you some alternative ideas of fillings to make beforehand if you prefer something different). We will make a red pepper and tomato sauce to accompany the filled pasta or a quick cheese sauce made with cream. Your tutor will show you how to make shapes of Orecchiette or Tagliatelle by hand and a homemade pesto to accompany the dish. At the end of the class you will have learned how to make, shape and fill fresh pasta and two sauces to serve with them. If you have a pasta machine the tutor will instruct you on the best way to use it but don’t worry if you haven’t as you can make some of the pasta by hand.

We will make one batch of fresh pasta to divide between two dishes.
