Join us for our latest Chinese Cook-in! We will be cooking Beef in Black Bean sauce with Singapore noodles. We will cook these dishes together on zoom.

BEEF IN BLACKBEAN SAUCE & SINGAPORE NOODLES

EQUIPMENT REQUIRED:
• A large frying pan or wok x 2
• Saucepan
• Spatula or fish slice x 2
• Sharp knife
• Chopping board for raw meat (if used)
• Chopping board for vegetables

We are time limited so please have everything ready and weighed out before we start so we can have time for questions at the end. If you have everything chopped and ready the cooking time is quick, but if you prefer you can cook just one of the dishes.

BEEF IN BLACKBEAN SAUCE INGREDIENTS required
MARINADE
• 450g/1lb rumpsteak sliced thinly into strips
• 1 tbsp rice wine or dry sherry
• 1 tbsp light soy sauce
• 2 tsp sesame oil
• 1 tsp cornflour

SAUCE
• 2 tbsp groundnut oil
• 400g can black beans
• 1 tbsp garlic, finely chopped
• 3 tbsp spring onions, finely chopped
• 1 tbsp shallots, chopped
• 1½ tbsp dark soy sauce
• 1 tsp sugar
• 150ml beef stock
• 1 tbsp sesame oil

SINGAPORE NOODLES

Prep time 20 minutes cook time 10 minutes serves 4
INGREDIENTS
250g chicken or tofu cut into ¾ inch cubes ( or whole raw shrimp)
¼ teaspoon salt
1–2 tablespoons wok oil – a high temp oil like peanut or coconut oil
120g vermicelli rice noodles ( **don’t use more)
½ an onion, sliced thin
1 cup match stick carrots, or 1 carrot shredded
1 red bell pepper, thinly sliced
1–2 cups snow peas ( or sub green beans, baby bok choy or shredded cabbage)
4 cloves garlic, rough chopped
2 eggs, whisked with a fork, with a 3 finger pinch of salt
3–6 dried red chili peppers ( or sub chili flakes at the end)
1 tablespoon madras curry powder ( yellow curry powder)
½ teaspoon turmeric
½ teaspoon salt, and more to taste

Singapore Noodle Sauce:
INGREDIENTS
1 tablespoon shaoxing wine ( Chinese cooking wine, or mirin, or white wine)
1 teaspoon sesame oil
1 teaspoon soy sauce (or sub-gluten-free soy sauce)
1 teaspoon fish sauce (or sub vegan fish sauce)
1 teaspoon sugar or honey or other substitutes

Please join Zoom five minutes before your session is due to start where you will be held in the ‘waiting room’. Your tutor will then admit you when they are ready for the class to begin.
