Flour Power - Introduction to Bread and Pastry
A hands on workshop for those new to bread and pastry making, giving you practical experience in baking a basic bread and shortcrust pastry.

Hilary will demonstrate and explain easy and effective methods of baking bread and ideas for finished savoury rolls, plaits etc.

You will learn to judge when doughs are mixed, fermented, proved and baked. During the workshop you will make, by hand, a classic loaf (or create the mix in to your choice from the selection below)

Whilst waiting for our bread to prove we will turn our skills to make shortcrust pastry that we will make into pasties or a quiche without a soggy bottom!

By the end of the workshop you will be able to bake your own breads and gain a basic understanding of how “dough” works. You will also learn how to conquer shortcrust pastry and have created a delicious quiche or pasties for tea!

BREAD & PASTRY MAKING

EQUIPMENT REQUIRED:
• Large mixing bowl x2
• Small mixing bowl
• Knives and chopping boards
• Baking sheets line with paper
• 1 large mixing bowl
• Rolling pin
•20 cm ( preferably loose bottomed) flan dish
•F rying pan (small to medium)
• Chopping board and knives
• Grater

Suitable for anyone who would like to learn how to bake bread and conquer short crust pastry from scratch.

We are time limited so please have everything ready and weighed out before we start so we can have time for questions at the end.

INGREDIENTS BASIC BREAD:
• 500 strong white bread flour
• 2 tsp salt
• 7gm sachet fast action yeast or 15g fresh yeast
• Pinch sugar
• 3 tbsp oil
• 300ml water

FOR THE FILLINGS
STROMBOLI BREAD
• A jar of green or red pesto
• 100g of one of the following cheeses - cheddar/ brie/ soft goat’s cheese - or one of your choice
• 100g ham/ chorizo/ salami/cooked bacon/ for each 500g bread
• A filling of your choice - sundried tomatoes/ olives/ artichokes/ anti pasti

FILLED LOAVES OR SHAPED BREAD
The quantities are up to you depending upon personal taste – I suggest maybe 100g
• Parmesan and garlic, olives
• Sundried tomato
• Walnut or spinach and blue cheese
• Brie and cranberry,
• Chorizo and cheese,
• Cheese and onion seeds,
• Chilli
• Onion and Walnut
• Cooked butternut squash and cheddar

The choice of filling may be determined by which shape you choose.
• Butternut squash or spinach filling can be soft and requires cooking rolled in to a loaf tin and not a plait.
• Chorizo is drier so ideal for a plait, wreath or tear and share.
• Walnut and blue cheese is ideal in a hand crafted round so each piece of stilton melts as you bite into it.

SHORTCRUST PASTRY
500g plain flour
Pinch salt
125g lard or Trex
125g butter or pastry margarine
4 fl oz cold water

Ingredients for Quiche
½ onion finely chopped or ½ leek finely sliced
2 bacon rashers or slices ham
3 eggs
225 ml cream or milk
100gm mature cheddar cheese

For vegetarian/ alternative fillings - they can be cooked asparagus or broccoli, blue cheese, sundried tomato, rocket, fried mushrooms, ……..

Ingredients for Cheese & onion pasties for 4 pasties
125g grated cheddar cheese
1 tbs crème fraiche or cream cheese
½ sliced onion fried
