Curry Cook-in
Join us for our latest Curry Cook-in! We will cook a delicious Vegetable Biryani and a Bhoona Beef together on zoom. We have given you the recipe for a homemade Raita and Dahl which Hilary will demonstrate then you can make it in your own time to accompany your dishes.
EQUIPMENT REQUIRED :
• A large roasting tin or oven proof dish
• A large oven proof pan with lid
• Spatula or fish slice x 2
• Sharp knife
• Chopping board for raw meat (if used)
• Chopping board for vegetable

VEGETABLE BIRYANI & BHOONA BEEF
Pre-Prep Time: 25 minsCook Time: 45 mins and 65 mins respectively Servings: 4
SPICED VEGETABLE BIRYANI
Ingredients:
• 2 tbsp vegetable oil
• 1 small cauliflower, broken into small florets
• 2 large sweet potatoes or butter nut squash, peeled and cubed
• 1 large onion, sliced
• 1l hot vegetable stock
• 3 tbsp hot curry paste (Madras is good)
• 1 red chilli, seeded and finely chopped
• large pinch of saffron strands
• 2 tsp mustard seed (black or white)
• 500g basmati rice (rinsed twice in cold water)
• 140g trimmed green bean, halved or peas
• 2 lemons, juice only
• a handful of fresh coriander leaves
• 50g packet salted roasted cashew nuts
• poppadoms and raita, to serve
BHOONA BEEF
Ingredients:
• 500g stewing beef cut in to 2cm (1inch) cubes beforehand or use quorn beef
• 50g butter or ghee
• 1 large onion, chopped
• 1 tin chopped tomatoes
• 1 tsp tomato puree
• 1 tsp salt
• 1 tsp turmeric powder
• 1 tsp chilli powder
• 2 tsp Madras curry powder
• 1 tsp garlic powder
• 15 fl oz water
• chopped fresh coriander to garnish
Should you choose to make the Raita and Dahl to accompany your curry then you will also need the following ingredients:
RAITA (demonstration)
• 150g plain yoghurt
• ½ tsp salt
• ¼ tsp cumin
• 2 tbs onion finely chopped
• ½ cucumber finely chopped
• 1 tbs fresh coriander or mint and a sprinkling of chilli
DAHL- this can be made to accompany the Biryani
• 225gm lentils
• 1 bay leaf
• 2 tbs vegetable oil
• 1 large carrot chopped
• 1 large green pepper chopped
• 1 large onion chopped
• 1 clove garlic crushed
• ½ “ piece root ginger peeled and grated
• ½ tsp each – ground cinnamon. Cumin, coriander,
• 400g tin chopped tomatoes

Please join Zoom five minutes before your session is due to start where you will be held in the ‘waiting room’. Your tutor will then admit you when they are ready for the class to begin.
