Summer Festival: Curry Cook-in
Join us for our Summer Festival classes to keep you learning. We didn’t want to leave you bored over the summer and yearning for your learning, so we’ve decided to hold a Summer Festival where you can continue your favourite class with your favourite tutor or even try something new!

At our latest Curry Cook-in we will cook a pea and new potato curry accompanied by roti (otherwise known as flat bread) and onion bhajis, which you will be able to finish yourself after preparing the basic mixtures and a demonstration of the cooking method. At the end of the class, you will have a light summer curry using easily obtained ingredients and accompaniments to produce a meal for friends or relatives.

Pea and New Potato curry, Roti and Onion Bhajis.
Welcome! We will cook this curry and accompaniments together on zoom. We are time limited so please have everything ready and weighed out before we start so we can have time for questions at the end.

You will need the following:

Equipment:
• A large deep frying pan or wok
• Saucepan or deep fat fryer
• Spatula or fish slice x 2
• Sharp knife
• Chopping board for raw meat (if used)
• Chopping board for vegetables
• Large bowl x2

Pea and new potato curry

Pre-Prep Time: 10 mins Cook Time: 50 minutes Servings: 4

Ingredients:-
• 1 tbsp vegetable oil
• 2 onions, sliced
• 3 red chillies, deseeded and finely sliced
• thumb-sized piece ginger, roughly chopped
• 2 tsp cumin seeds
• 1 tsp Madras curry powder
• ½ tsp turmeric
• 750g new potatoes, halved
• juice 1 lime
• 500ml pot natural yogurt
• small bunch coriander, stalks and leaves finely chopped
• 200-300ml vegetable stock, or pea stock (see tip, below)
• 300g podded fresh peas (or use frozen)
• lime wedges, to serve

Flat bread or Roti

Prep time 10 minutes. Cook time 10 minutes

Ingredients:-
• 225g self-raising flour, plus extra for dusting
• ½ tsp salt
• 1 tbsp vegetable oil, plus extra for brushing and frying

Onion Bhajis

Prep time 5-10 minutes

Ingredients:-
• 100g Gram flour
• ½ tsp red chilli powder
• ½ tsp turmeric
• ¼ tsp garam masala
• pinch salt
• ¼ teasp bicarbonate soda
• 2 Med onions sliced

This is an online course that will be delivered via Zoom, so please ensure that you can access this on the device you are using and please also ensure that your Zoom video is switched on when you start the class. Please join Zoom five minutes before your session is due to start where you will be held in the "waiting room". Your tutor will then admit you when they are ready for the class to begin.

You will receive details and joining instructions of how to access the course shortly before the start date by email.
