Join us for another in our series of 'Cook-ins'. This week its Chinese. Options again for the Vegans and Veggies among you. So cooking again with Hilary and your lock-down buddies!

This course is suitable for anyone who enjoys chinese cookery and wants to improve their skills! You will need to be able to access this online course via Zoom. Prosp User 4
In the class we will make the Cantonese chicken and the spring rolls which you can fry at your leisure. (I have also given you the recipe for fried rice if you would like to attempt that yourselves before or after the session.)
Pre-Prep Time: 25 mins Cook Time: 10/15 minutes each Servings: 4
You will need to purchase and prepare the following ingredients and have the equipment mentioned ready.

Equipment:
• A large plate
• A wok or large frying pan
• Spatula or fish slice
• Sharp knife
• Chopping board for raw meat (if used)
• Chopping board for vegetables
Cantonese Chicken

Ingredients:
• 2 tbs ( 30ml) groundnut or stir fry oil
• 4 Chicken breasts cut in to small strips
• For a vegetarian option use Quorn or 300 – 400g mixed vegetables such as mangetout, corncobs, water chestnuts, beansprouts, green beans, onions
• 3 tbs corn flour
• 2 tbs oil
• 1 green pepper cut into thin strips
• 2 carrots cut in to thin strips
• 1 small onion cut into slices
Sauce:
• 300ml tin pineapple in juice – preferably chunks but if using slices – cut them in quarters
• 3 tbs light brown sugar
• 3 tbs white wine vinegar
• 1tbs cornflour
• 150ml chicken stock
• 3 tbs tomato Ketchup

Spring Rolls
Total cooking time: 15 mins

Ingredients:
• 1 packet filo pastry
• 50g bean sprouts
• 1 tbsp oil
• 2 large cloves crushed garlic
• 2 tbsp grated fresh ginger
• 6 spring onions, chopped
• 1 carrot grated
• 100g mushrooms finely chopped
• 3 tbsp finely chopped coriander leaves
• 2 tbsp sweet chilli sauce
• 1 tbsp fish sauce (for vegetarian option use extra soy sauce as replacement)
• 2 tbsp soy sauce
• 1 egg white, lightly beaten
• oil for deep frying

Egg Fried Rice (Optional you would prepare and cook this separately)
Ingredients:
• 150 gms rice – cooked and cooled
• 2 onions
